i always assumed the goo in the old apature looked different because it was mostly water, the caves seem moist and that implies groundwater or rainwater seeping down. The better maintained parts of aperture are sealed off from the wet but the old parts are slowly collecting water into a reservoir without maintenance. i assumed it was toxic because everything about this place and glados above would produce toxic waste, there would absolutely be enough random goos and deadly neurotoxin to make the water poisonous, but leaking deadly goo from portal 1 makes total sense. It doesnt make sense to me that leaving it around would change color unless every other one of this guys theories is correct
