If you have 0.4.0.2 the only organelles you can’t access in the editor are the predatory pilus and cilia, and that’s because they haven’t been added to the game yet.
If you have a dev build then you’ll need to add a nucleus to your cell to unlock the membrane-bound organelles (mitochondria, chloroplast, etc.).
