You are still assuming that immortality is just a “very long lifespan”, and as such you are applying your finite experience of just a few decades to it.
The very fact that your brain is made to survive in a neolithic tribe is further evidence that you can’t endure immortality, your brain is simply not designed for it; there is no way to design a mind for immortality that doesn’t fall into either: a being that does nothing because it has no drive or want (and therefore is impossible to fall into boredom) or reinventing death by making it forget its experiences after a certain point or some simile.
Wether the universe is infinite or finite is irrelevant, it is composed of finite elements, and any set that is composed of finite elements will have finite combinations of them.
There is only a finite amount of meaningfull patterns that the bits can take, even assuming infinite bits, the patterns would result in repetition.
These three sections are further evidence that you still think of it as a “very long lifespan” instead of understanding the infinity of immortality. Cycling through things will buy you some more time, but that doesn’t matter because you will still have an infinite amount of time to live afterwards.
You are also still applying a finite experience to an infinite one, people don’t get bored of literally everything because they don’t experience things billions of times. Also, being relaxed and bored aren’t mutually exclusive, something can make you feel both ways at the same time.

if you get bored of your simulated predators, make them stronger, faster, and better at killing you.
if you get bored of the laws of the universe, add new ones to your simulation.
if you get bored of the conversations you have with the people you are spending eternity with, tell them.
perhaps start speaking only in riddles and rhymes
perhaps start looking very intently on one spot on their face until you’ve convinced them that there’s something on their face
perhaps start playing harmless pranks on them
perhaps start doing weird stuff with your body that it doesn’t look like it should be able to do, to see how they react
if all else fails, find new people to talk to.
