I really like the more realistic approach to survival in that game. Though, I never played it and only watched videos on it.

I played TerraFirmaCraft mod for Minecraft which I quite enjoyed (cool vibes and a lot of fun geology and geography etc.) though.

Would the most realistic (theoretical) mod to minecraft be one where the character can only carry as much stuff a regular human could?

Well considering 1 block is a meter cubed, taken literally even a single log would be like 1 ton, and the planks 250 kilos each (assuming theyโ€™re just logs shaped into a box), a stone block would be around 3 tons.
Even a wool block would be 25 kilos.
Most people will be capped out below a hundred kilos, and the record for a dead lift is just over 500 kilograms.

So not a whole lot of inventory space.

You can only hope the wooden pickaxe is crafted like it is because steve is stupid and not that itโ€™s actaully 1 ton of material.

Well in that case, the minimum needs to be at least the heaviest item to beat the game. To that you need blaze rods in the nether. In order to that, you need obsidian, which being glass, weights 2 and a half tons per block;

the iron pickaxe to obtain the diamonds to mine the obsidian, will weigh similar, as a single iron ingot (a ninth of a cubic meter) will weigh about 800 kilos and you need 3, + 2 sticks.

The real run killer though, is the furnace to smelt the iron ore, assuming minecraft stone is limestone, which weighs 2.7 tons per block, means you need to hold 21.6 at once to craft the furnace to beat minecraft.

If you allow generated loot, its only about 2.5 tons to move the obsidian from a blacksmith chest.

Maybe those things could be first crafted from some pebbles and then assembled bit by bit small enough for the player to reasonably carry?

Looking from mobile the fancy font text seems to be a bit messed up when on phone. Specifically o, g and e seem to look bigger than they should.
