Does this protection extend to the esophagus?

if it doesn’t then dragons would have one Hell of a time with burns from eating their prey, especially since they tend to cook them with their breath and then eat them immediately afterwards while they’re still burning in most media
and the esophagus is a Pretty belgium Important thing to not kill off all the cells of every time you eat
so any dragon which didn’t have it exctend throughout the whole GI tract would die of starvation a while after the first time it eats its prey whole within a few seconds of finishing cooking it
